Pearl's spicy prawns with garlic and hot spices

Serves 2-4 as an appetizer

Ingredients
1 Tbsp. Ground black pepper
1 Tbsp. crushed red chili flakes
1 tsp. kosher salt
½ tsp. cayenne pepper
½ tsp. paprika
2 Tbsp. olive oil
2 tsp. minced garlic
½ lb. medium sized prawns (peeled)
2 tsp. spice mix (see above)
¼ cup white wine
¼ cup chicken stock
2 Tbsp. softened butter
Fresh lemon zest

Method

• Combine first five ingredients to make spice mix. Reserve.
• Heat oil in sauté pan over medium-high heat.
• Add garlic and prawns; allow to brown slightly on all sides.
• Add spice mix and mix well.
• Deglaze pan with wine and stock. (Be careful as wine may “flambé” over open flame) Allow to reduce by half.
• Reduce heat and fold in butter to complete sauce. Remove to serving dish and pour sauce over top of prawns.
• Zest fresh lemon over top.

Serve with sliced bread to soak up all the delicious sauce!
