Gray’s at the Park Cabernet Mushrooms

Serves approximately 10-15
10 lb Crimini mushrooms (washed and steams trimmed)
¼ cup Garlic, minced
¼ cup Shallots, minced
½ tsp Chilies, crushed
1 qt Red wine
¼ cup Olive oil
Heat olive oil in a deep pot; add garlic and shallots and sautee to a sheen. Add mushroom caps and brown slightly. Add red wine, crushed chilies and let it cook until all the liquid is evaporated. Stir frequently. Spread onto a sheet pan and let it cool.
