Anthony's Alaska Halibut with Lemon Basil Glaze

Fresh Alaska Halibut with Lemon Basil Glaze
Ingredients:
- 2 pounds fresh Alaska halibut cut into 8-ounce pieces
- 2 ounces olive oil
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 4 tablespoons lemon basil glaze (recipe below)

Procedure:

Preheat chargrill or broiler. Massage halibut with olive oil, kosher salt, and black pepper. Place on well-seasoned grill or grill pan or under broiler. Cook to 60 percent done. Turn, and continue cooking until done (to 140 degrees). Remove from grill or broiler and top with lemon basil glaze.

Yields 4 servings

Lemon Basil Glaze

Ingredients:
- ¼ cup + 2 tablespoons olive oil
- 1½ tablespoons lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- ¼ cup fresh basil, chopped
- 1 teaspoon fresh garlic, finely chopped
- ¼ teaspoon kosher salt
- ¼ teaspoon sugar

Procedure:

Finely chop fresh basil and garlic. Whisk all ingredients to combine. Keep at room temperature.

Anthony’s recommends pairing this dish with Chinook Wines’ Sauvignon Blanc or Woodward Canyon’s Sauvignon Blanc.
